spicy mexican chicken & conecuh chili

happy memorial day, friends!
i hope everyone has had a blessed memorial holiday weekend:)

just wanted to share a little something that i just kinda created....
you never know how these things will turn out.
i am happy to report, 
it was a HIT!

spicy mexican chicken & conecuh sausage chili

ingredients:
3-4 boneless skinless chicken brests
1/2 package of conecuh 
2 cans low soduim chicken broth
4 minced garlic cloves
lots of jalapenos (i say lots cause i LOVE it hot!)
2 cans crushed tomatoes
1 can pinto beans (drained & rinsed)
2 cans black beasn (drained & rinsed)
1 can of yellow corn (drained & rinsed)** i used low soduim in all the cans or either NO salt added
2 tbls of EVOO
3 tbls chili powder (more depending on how much heat ya want)
salt/pepper

directions:
-boil the chicken and sausage for about 25 min. (get's a ton of grease out)
-shred / cut all the meat up
-in a sautee pan, pour in the evoo and slightly brown your garlic & then add jalapenos, simmer abt 2 min.
-add the meat and get a little browned
-add the chili pepper, s/p, stir well....
-transfer into a dutch oven, add tomatoes,broth, beans & corn
-bring to a boil, cover & simmer for 30 min.
{OR at this point throw into a crock pot on low for 4 hrs}
-serve with tortilla chips, enjoy :)
