hello all you summa lovin' ladies (and wes!)
i hope you are all enjoying your summer!
i knew we are.
we are non.flippin.stop.all.day.long.

so with that said :(
summer will be over in about 7 very short weeks.
i am going to be leaving the blogworld....
(maybe hit twitter/fb/pinterest/instagram here & there)
literally, figuratively, physically & mentally.
i will return back in the fall....
new things...new topics...
who knows what else will be new:)

i have a zillion & 1 things to do between now & then.
i will be back on monday with the giveaway winner.
i will be back right after that with a canvas review/giveaway
i'll be doing a few guest blogging for friends.

SPAGHETTI W/PESTO
{from the Eat-Clean Diet}

Ingredients
• 1 lb / 454 g noodles (buckwheat or rice noodles)
• 3 quarts / 3 L water
• 1 tsp / 5 ml sea salt
Pesto Ingredients
• 3 cups / 720 ml fresh basil leaves
• 1/2 cup / 120 ml almonds, coarsely chopped
• 3/4 cup / 180 ml parsley
• 2 cloves garlic, passed through a garlic press
• 1/4 cup / 60 ml extra virgin olive oil
• Sea salt


Preparation
  1. Bring water to a rolling boil. Add sea salt. Cook noodles al dente. Rinse under cold water to prevent clumping when cooking is complete. Place cooked noodles in large sauté pan or saucepan. Set aside.
  2. Prepare pesto sauce by placing all ingredients in a food processor. Pulse until ingredients resemble a smooth paste. Scrape pesto out of food processor bowl and pour over cooked noodles. Over medium heat, toss noodles and pesto sauce until heated through. Serve hot.

  3. Yum! I've been growing some basil. Hopefully it will do good and i'll just whip this little pasta dish up. We've really been trying to eat healthy lately and boy oh boy is it a big stretch not to deep fry something round here! Trials and tribulations of being raised in the south I guess!

  6. Wow enjoy your summer break. Its such a short season..go out there and enjoy it while it lasts!! I will miss coming here and seeing your enthusiastic posts but am all for taking time off to recharge the batteries..we all need to do it! Love this recipe above and am printing it as we speak.

  14. Enjoy your summer! BTW, I made your lemon cake yesterday, it was delish even though I thought I had the lemon jello, but it was pudding! I used it anyway and it turned out fine!

    I will miss you but I think you deserve a little break--I keep getting teary-eyed at the most random moments with the Cuties because I know this could be my last summer with them if I move away for a teaching job!
