Happy Monday Y'all! I hope that everyone had a blessed weekend. I sure had a great one. My husband came back to town from being in Birmingham/Tuscaloosa. It's bittersweet as he is leaving to go back today. We sat & look at all his files/pictures via computer. Y'all, the insides of the homes that he was able to get inside were nothing short of heart stopping. The pictures of homes/neighborhoods flattened out left me in tears. Please keep all these families in your prayers. They have such a long & hard road ahead. Just remember, no matter what we are facing today, someone always has it worse.

I make this chicken & dumplings at the drop of a hat. 
It's super easy.
Easy & Yum.

Easy Chicken & Dumplings



Ingredients:
1 whole chicken
1 can of cream of chicken soup
1 pkg dumplings

Prep:
Fill a pot up with enough water to cover chicken.
Boil on med for about 45 min (or til meat starts to come off bone)
Remove the chicken & let chicken cool. 
(Save the water, which is now your broth)
Pick chicken off the bone.

Tear apart dumplings into bite sized pieces.
Turn broth back on to a a low boil. 
Add cream of chicken soup.
Add dumplings a few at a time, stirring constantly.
Lastly, add the chicken back in.
Cover and let simmer for about 45 more min.

And don't forget a big glass of sweet tea y'all!
