Photobucket

YAY! I love Fridays!
I don't know about you but I sure do look forward to these recipe swaps☺
I have had a few people ask about doing it each week vs. every other week.
I honestly would be happy to do it.
The voting was like tied 3 ways and every other Friday was the "middle".
So, please weigh in.

Don't forget to enter my Marley Lilly giveaway,
it ends 10pm Sunday evening.
Winner announced Monday!
I will also be blogging about "My favorite things".
Just a few discoveries I uncovered the month of March.
i need a shopaholic rehab & i know a few blogger friends that i could room with!!

How about something good to eat??

Seafood & Black Bean Chili
{my version from Eat Clean-STRIPPED}

Chateau St. Michelle Reisling-
the perfect wine with this chilie.
{that sounds redneck mixing the 2 but take my word for it!}

Ingredients:
1tsp EVOO
5 garlic cloves
1/2 tbsp sea salt
1/2 tsp fresh ground pepper
1 tsp chili powder
1 tbsp fresh oregano
{i used olive oil with oregano}
1 bay leaf
2  cans of black beans, drained & rinsed
4 cups reduced sodium chicken broth
1 lb fresh halibut
1/2 lb cooked bay shrimp
{both cut into bit size pieces}
1 lime, cut into wedges
3 jalapeno peppers {chopped}
1 can diced/whole tomatoes
{your preference}

Directions:
Heat oil in dutch oven over medium heat.
Add garlic, salt & pepper.
Heat til tender.

Add peppers, chili powder, oregano, bay leaf, beans, broth & tomatoes.
Cover & simmer 20 min.

Uncover & remove bay leaf.
Add fish and shrimp.
Let cook for 4-5 minutes.
Add more salt/pepper to taste.

Serve into bowls.
Squeeze a little lime on top & pour a glass or 3  of wine, ENJOY y'all!!

** this is also DELISH the next day OR frozen & reheated.
I freeze in single serving size containers so I can pop one out for lunch**
