What's cooking Sunday

Happy Sunday my sweet friends. I hope that this weekend has been a blessed one for you. Mine has been non-stop, what else is new? It's actually Sat night and I am home alone. I have gone since my feet hit the ground today. Mini-me is staying with a friend and my boys went out of town for the night to a concert. I am blogging and then getting in bed and watching my favorite Saturday night shows: COPS & Americas Most Wanted ☺ I am going to enjoy the beautiful warm, yay, day! I am going to go for a run by the water & probably throw out new pine straw. I love new pine straw! I have to go to the grocery {blah} and get something to make for dinner. I love recreating new recipes. My mother just bought me "Southern Living: Comfort Food." Not sure what tonight's creation will be yet. I guess I will also make my Mardi Gras wreath. Just call me Martha........

I love Sundays. I remember as a little girl the smell of roast that had been cooking all morning while we were at church. I coudn't wait to dig into that pot and try to get every.single.piece of garlic that was in there. Oh, I love garlic! Unfortunately, Sundays these days aren't like the old days. I am lucky if we are all home at the same time during the weekend. Usually it's just the Mr & myself. I look forward to our family dinners. So, while Sunday lunches aren't always what we do {we usually go to brunch at our favorite Organic Deli}, I try to make our "Family Dinner" on Sunday evening. I love traditions and strive on routine.

The recipe I want to share today is out of this months issue of Clean Eating Magazine. I had never even heard of it, much less can pronounce it. My best pronunciation would be Y U M . It's delish and you feel so good after eating it. It's not heavy at all. Just so clean.

Picadillo Chowder


1lb lean ground port
4 cloves garlic, chopped
1 cup black beans, rinsed
1/4 cup brown rice
1 tsp ground cumin
1 tsp chili powder
juice of 1 lime
12 oz low soduim chicken broth

Cook rice. Fluff with fork & set aside.
Cook pork over med heat in stock pot til opaque.
Add garlic. Cook for 2 min.
Drain fat from pork.
Return to pot and add broth, beans, rice, chili powder & cumin.
Bring to boil, reduce to simmer & cover for 20 min.
Stir in lime juice, cook for 15 more min.

**eta: I would assume you could substitute the pork for your choice of meat. I was a little concerned b/c I have never cooked with "ground pork" but was super surprised at how good it was

  11. mmmm. i'm going to have to give that a try. we're eating low carbs here… but i can easily substitute brown rice or quinoa.
    love me black beans and cumin. mmmm. i bet this would taste really good with a boston butt all shredded up, too.
    now i'm hungry. better go get busy!!

  12. I would have never guessed that show would be on the top of you list! That's funny, my husband loves it too. I can barely get through it without leaving the room with a tight stomach saying "What's WRONG with people!!" Maybe I should try your comfort food recipe :D XOXO

  13. This is an interesting twist to the classic Cuban dish. Picadillo is usually made with ground beef, onion, garlic, tomato sauce, raisins and green olives.
